Sweet Success for Monis Sherries at Veritas
 
Monis, South Africa’s oldest producer of fortified wines, received three awards for its sherries at this year’s SA National Wine Show.
 
SOUTH AFRICA, WESTERN CAPE, 13 OCTOBER 2011 - South Africa’s oldest producer of fortified wines received three awards for its sherries at this year’s SA National Wine Show with the Monis Full Cream Sherry receiving gold and the Monis Medium Cream and Pale Dry both silver.

The winemaker, Dirkie Christowitz, says the secret of Monis’ continued success lay in the traditional methods used to craft these wines.

“Making sherry is a time consuming and meticulous process, one that relies very much on the quality of the grapes selected but also on the way the sherries are monitored throughout the six years spent in barrels.

“Our sherries are made from Chenin blanc grapes hand-picked at optimal ripeness. Once crushed, the must is fermented with flor yeast to produce a dry-white wine. After fortified to 15, 2 % alcohol, the wine was inoculated again with flor yeast for the secondary fermentation to take place.

“The sherries spend three years in oak barrels in the criadera under a “blanket” of flor yeast which gives the wine its unique taste and bouquet. This process is followed by maturation in the solera system, to acquire their nutty, rich flavours. In the case of the Medium Cream and Full Cream, sweet wine is added before blending and bottling.”

The gold medal winner, the Monis Full Cream Sherry, is dark brown in colour, with sweet vanilla, nuts and honey on the nose, And rich toffee and brown sugar flavours on the palate. Serve this versatile sherry chilled before or after dinner, with desserts such as Malva pudding and macadamia ice cream or to add depth of flavour to sauces, reductions and soups.

The Monis Full Cream, Medium Cream and Pale Dry all retail for around R60 each at leading liquor outlets.
